De diffusietoren is een schacht van wel 30 meter hoog, waarin zich een centrale as bevindt, die voorzien is van een aantal vleugels. Door de weliswaar langzaam draaiende beweging van deze as wordt het snijdsel naar boven getransporteerd. Tegelijkertijd wordt er boven in de toren steeds warm water toegevoegd, zodat de massa in beweging blijft. Dit water lost de suiker op en verlaat de toren aan de onderzijde als ruw, ongezuiverd suikersap en wordt ook wel torensap genoemd. Diffusie is het proces waarbij de suiker van het snijdsel in het water oplost.

The diffusion tower is a shaft of up to 30 meters high, in which there is a central axis, which is equipped with a number of wings. This water dissolves the sugar and leaves the tower at the bottom as raw, unrefined sugar juice and is also called tower juice. Der Diffusionsturm ist ein Schacht von bis zu 30 Metern Höhe, in dem sich eine Mittelachse befindet, die mit einer Reihe von Flügeln ausgestattet ist. Durch die wenn auch langsame Drehbewegung dieser Achse wird das Schnittgut nach oben transportiert. Gleichzeitig wird oben im Turm ständig warmes Wasser zugeführt, sodass die Masse in Bewegung bleibt. Dieses Wasser löst den Zucker auf und verlässt den Turm am unteren Ende als roher, ungereinigter Zuckersaft auch Turmsaft genannt. Diffusion ist der Prozess, bei dem der Zucker aus dem Schnittgut im Wasser gelöst wird.
